Two different quantities with one name

A nutrition label reports what laboratory analysis found in a sample of the food, which is a measurement of content rather than a prediction about any person eating it. How much of that content becomes available depends on the form the nutrient takes, on what else is present in the meal and on the state of the digestive system receiving it. The difference between the two figures can be substantial, and it varies by nutrient in ways that are not obvious from reading the packet.

This is why comparisons between foods based purely on printed content can mislead, particularly for minerals whose absorption is heavily influenced by context. None of it makes labels useless, it simply means they answer a narrower question than most readers assume they do.

What preparation changes

Heat, soaking, fermenting, grinding and sprouting all alter the structure of food in ways that change how easily its components can be released during digestion. Some of these increase availability by breaking down compounds that would otherwise bind a mineral and carry it through the gut unabsorbed. Others reduce it, since certain vitamins are sensitive to heat or dissolve into cooking water that is then discarded rather than consumed.

The net effect for any particular food and nutrient is therefore specific rather than general, and blanket claims that cooking destroys or improves nutrition are both wrong. Traditional preparation methods often happen to improve availability, which is interesting without implying that any particular tradition was designed with that in mind.

Combinations within a meal

Nutrients interact during digestion, with some pairings improving absorption noticeably and others competing for the same transport routes across the gut wall. These interactions are reasonably well described for a handful of well-studied nutrients and much less clear for most of the compounds found in ordinary food. Popular writing tends to convert the well-studied cases into rules about food combining that go far beyond what the underlying observations support.

The practical implication is modest, since a varied diet supplies many combinations across a week and does not depend on any single meal being optimally arranged. Reading these interactions as a puzzle to be solved at every meal produces anxiety without producing any measurable benefit.

Why individuals differ

Absorption varies with age, with the state of the gut lining, with certain medications and with existing status, since the body absorbs some nutrients more efficiently when stores are low. That last mechanism is a regulatory feature rather than a curiosity, and it means intake and status are related but not proportional to one another. Composition of the gut microbiota adds further variation whose importance is being actively investigated and which is frequently overstated in commercial material.

The result is that two people eating identical meals can end up with genuinely different measured status, which complicates any general recommendation. It is also why questions about a specific person's nutritional status are answered by testing and clinical assessment rather than by arithmetic on labels.

What follows from all of this

Very little of it supports buying anything, which is probably why this part of nutrition receives less popular attention than the parts that do. The reasonable conclusion is that variety across a week matters more than optimisation of any single meal, because variety supplies many forms and many combinations. It also argues for treating precise nutritional arithmetic with some scepticism, since the inputs to that arithmetic are less precise than they appear.

Anyone with a suspected deficiency, a malabsorption condition or a restricted diet for medical reasons needs individual assessment rather than general principles. Supplement decisions in particular belong with a clinician, since both deficiency and excess carry consequences that vary by nutrient and by person.
