Why Ingredient Lists Are Ordered The Way They Are
Ingredients appear in descending order of weight at the point of manufacture, a rule that reveals proportions but is distorted by water loss and by splitting similar ingredients.

The ingredient list on a packaged food follows a rule that makes it far more informative than it first appears. It also has predictable blind spots that are worth knowing about.
Descending weight is the rule
Ingredients are listed from largest to smallest by weight, measured as they were added during manufacture. The first item is the one present in the greatest quantity.
This gives a rough sense of proportion without any figures being stated. If a named ingredient appears near the end of a long list, it is present in a small amount.
The rule applies at the point of mixing rather than in the finished product, which is where the first significant distortion enters.
Water loss reorders the finished food
Many products lose water during baking, drying or frying. An ingredient added mostly as water can therefore rank high on the list while contributing little to the final mass.
The reverse also happens. Dry ingredients that absorb moisture during processing may be more prominent in the finished food than their listed position suggests.
This is why the ordering is best read as a guide to the recipe rather than a description of what ends up on the plate.
Splitting moves ingredients down the list
Where several similar ingredients serve the same purpose, each is listed separately by its own weight. Two or three related items can each rank lower than a single combined entry would.
The effect is most visible with sweetening ingredients, which exist in many forms that can appear individually rather than as one aggregate quantity.
Reading the list for categories rather than individual entries corrects for this. Grouping related items mentally restores a rough sense of their combined position.
Compound ingredients nest inside the list
An ingredient that is itself a made product often has its own components listed in brackets. These are ordered by weight within that component, not within the whole food.
Nested lists can therefore make a food look more complex than a comparable product that used the same component without breaking it down.
What the list cannot tell you
Order indicates rank, never quantity. Two products with identical ingredient orders can contain very different proportions of each item.
The list also says nothing about the form an ingredient took or how it behaves once eaten, which is where the nutrition panel and the food's physical structure become relevant.
Used alongside those, the ordering is a useful cross-check. Used alone, it supports comparisons between similar products far better than judgements about any single one.
