Why Fibre Is Measured In More Than One Way
Dietary fibre covers a range of substances with different physical behaviours, and analytical methods capture different subsets, which is why fibre figures are not directly comparable.

Fibre appears as a single number on a nutrition panel, which suggests a single substance. It is in fact a collection of very different materials grouped by what they are not.
The category is defined by exclusion
Fibre is generally defined as carbohydrate material that is not broken down by human digestive enzymes in the small intestine. That is a negative definition rather than a description.
What falls inside it ranges from rigid structural components of plant cell walls to soft gel-forming substances and short chains added to processed foods.
These share almost nothing except their fate in the upper digestive tract. Their physical behaviour, and what happens to them further along, varies enormously.
Solubility separates two broad behaviours
The traditional split is between fibre that dissolves or disperses in water and fibre that does not. The distinction is about physical behaviour rather than chemical family.
Dispersing types increase the thickness of gut contents, which slows how quickly material moves and mixes. Insoluble types add bulk and retain water without forming a gel.
Because these do different things, a food high in one is not interchangeable with a food high in the other, even where the panel figures match.
Fermentability is a separate axis
Some fibre is broken down by bacteria in the large intestine, producing short-chain fatty acids and gases. Other types pass through largely unchanged.
Fermentability does not track solubility neatly. Certain insoluble materials are fermented and certain soluble ones are not, so the older two-way split is an incomplete description.
Analytical methods disagree
Fibre is quantified by laboratory procedures that simulate digestion and then measure what remains. Different procedures leave different substances in the residue.
Newer methods capture components that older ones missed, which means the same food can carry different fibre figures depending on which method a jurisdiction requires.
Regulatory definitions also differ on whether isolated or synthetic fibres added during manufacture may be counted, adding another source of variation between labels.
What follows for reading a label
A fibre number states how much material passed the test used, not what that material will do. Two foods with the same figure can behave quite differently.
The food's form remains informative in a way the number is not. Intact plant structures deliver a mixture of types alongside the rest of the food's matrix.
Comparisons are most reliable within a product type and a single labelling regime, where the same method is being applied to broadly similar material.
